Woof wooooof! Carrot daaaaawgs! Dawgs on the loooose!

They're so juicy and full of flavor that you don't get sick of them halfway through like most faux dogs make me feel. The secret is some tomato paste, citrus, some other things, and marinating them for 24 HOURS!!!! You can eat all 4 of these cuz carrots are so good for you and you can get a nice orange glow ;)

I top mine with fried jalapenos for an extra spicy crunch, veganise based wasabi mayo, mustard, ketchup, onions, and relish!!!

CARROT DOGS 

INGREDIENTS

4 large carrots

4 hot dog buns

Marinade:

1/4 cup fresh lemon juice

1 tablespoon tomato paste

3 tablespoons brown rice vinegar

1/4 cup soy sauce

1 clove crushed garlic

1 teaspoon onion powder

1 teaspoon black pepper

1 tablespoon melted vegan butter

1/2 teaspoon ground sage

1/4 cup water from boiled carrots

Dash of red pepper flakes

Toppings:

Wasabi mayo (1/2 cup vegeanaise mayo mixed with 2 tablespoons wasabi paste)

Crispy jalapeños

Fresh jalapeños

Mustard

Sweet relish

Diced white onion

Ketchup

INSTRUCTIONS

  1. Bring a medium pot of water to boil, add carrots and boil for 8 to 9 minutes, or until they feel slightly tender when poked with a fork. Drain carrots, reserving 1/4 cup of carrot water.

  2. In a large bowl, add all marinade ingredients and stir until well mixed.

  3. Place the drained, boiled carrots in a large zip-top bag with the marinade. Allow to marinate for 24 hours. Gently shake the bag every once in awhile to ensure each carrot gets marinated.

  4. Grill the carrots for about 4 minutes on each side, or until they look nicely charred. If using a nonstick pan instead of grill, add 1 teaspoon of olive oil first.

  5. Toast hot dog buns, place carrot dogs in each, and add preferred toppings.
