Raspberry Plum Bars

 

Crust:

1 cup all purpose flour 

1.5 cups oatmeal

1/2 cup white or yellow cornmeal 

1 cup brown sugar

1 teaspoon baking powder

1/2 cup butter chopped into small cubes 

1/3 cup coconut oil

 

Raspberry Plum Filling: 

5 black plums (or preferred plum) pitted and chopped, about 2 cups

6 oz fresh raspberries

1/3 cup granulated sugar 

3.5 tablespoons flour

juice of one lemon

dash of salt

Steps:

1.) Preheat oven to 350 degrees. Line  a 9 x 13 baking pan with parchment paper and nonstick spray. 

 

1.) In a large bowl, mix together the 1 cup of flour, oatmeal, cornmeal, brown sugar, baking powder, and salt. 

 

2.) Mix in the coconut oil and butter, pressing the mixture together with your fingers. Mix until it resembles crumbly cookie dough. If mixture is too dry to be pinched together, add a tad more butter or coconut oil.

 

3.) Press 3/4’s of the oat mixture into pan, reserving a 1/4 of the oat mixture for the topping. Set aside. 

 

4.) In a medium bowl, stir together the raspberries, plums, lemon juice, sugar, flour, and salt.  

 

5.) Spread plum and raspberry mixture over the oat crust. Sprinkle the  remaining oat mixture on top. 

 

6.) Bake until golden brown, about 30 to 40 minutes. Place on cooling rack and serve warm or fully cooled.
